Healthy Ground Turkey Chop Suey
Ingredients
2 tablespoons olive oil
1 ½ cups celery - cut in strips
1 head broccoli - chopped
1 large onion - cut in wedges- 1 cup sweet pepper - cut into strips
1 cup carrots - cut in strips
1 clove garlic - minced
1 pound ground turkey (minced turkey)
1 ½ teaspoons salt - divided
⅛ teaspoon ground black pepper
2 tablespoons cornstarch
1 ⅓ cups water
2 tablespoons soy sauce
Instructions
- Heat olive oil over medium-high heat in a large skillet.
- Add celery, broccoli, onion, sweet pepper, and carrots and cook until lightly browned but crisp.
- Add garlic and cook for 2 minutes. Remove vegetables from skillet.
- Add ground turkey to skillet and cook through, leaving the meat in chunks. Drain if needed.
- Add salt, pepper and vegetables back to the skillet and mix.
- Combine the cornstarch, water and soy sauce in a separate bowl and whisk until thoroughly mixed. Add to the meat mixture. Cook and stir until the sauce thickens.
- Serve with rice and enjoy!
