Amazing Sweet and Spicy Pork Stir Fry
Ingredients
1 pound ground pork (minced pork) - tenderloin
2 cloves garlic
1 teaspoon ginger
3 tablespoons teriyaki sauce
1 tablespoon ketchup (tomato sauce Australia and UK)
¼ teaspoon Sriracha sauce - or any hot chilli sauce- 1 tablespoon orange marmalade
2 cups brown rice - cooked
1 head broccoli - bite-sized pieces
2 medium red pepper (red capsicum) - cut into strips
1 medium yellow onion - cut into small wedges or half-moons
2 medium carrots - sliced on a bias into small rounds
2 teaspoons Canola oil
Instructions
- In a large wok, heat the oil. Add the garlic and ginger. Cook for a minute until fragrant. Add the remaining vegetables.
- Cook vegetables for several minutes until they are cooked through but still crisp.
- Add pork and cook until pork is no longer pink.
- Meanwhile, in a small bowl, mix the teriyaki, ketchup, sriracha and marmalade.
- Add sauce, pork and vegetables.
- Cook for a few minutes more until cooked through and sauce starts to thicken.
- Serve over some brown rice for a complete meal.
