This weekend I will try my cooking skills on ground venison and mushrooms served with wild rice. Hubby will love it! And we will finally open that bottle of wine that’s become dusty on the shelf for over 10 months.
Venison is not a common ingredient in everyday meals but keep in mind that game meat is a healthier choice than pork or beef as it is leaner, low in fat and rich in protein.

Game meat like venison, rabbit, duck and buffalo is a healthier, low-fat alternative to the usual beef and pork. Have a look at this ground venison and mushrooms recipe I plan to cook for hubby and me this coming weekend.

Ingredients
 
 

  • Champignon Mushroom12 medium mushrooms - fresh, chopped
  •  
    1 pound ground venison (minced venison)
  • Red Onion1 medium red onion - finely chopped
  • Garlic1 clove garlic - finely chopped
  • Fresh Green Pepper Isolated On White Background1 medium green pepper (green capsicum)
  • Glass Bowl Of Olive Oil Isolated On White Backgroundâ…“ cup olive oil
  • Unsalted Butter1 teaspoon unsalted butter
  • Wooden Bowl Of Salt1 teaspoon salt - or to taste
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper
  • Oregano Dried In Wooden Bowl Over White½ teaspoon dried oregano
  • White Wine Swirling In A Goblet Wine Glass, Isolated On A White Backgroundâ…“ cup white wine
  • Pile Of Flour Isolated On White Background1 tablespoon all purpose flour (plain flour Australia and UK)
  • Bowl Of Cream2 tablespoons heavy cream (also called thickened cream)
  • Mustard Isolated On White Background. Top View1 tablespoon mustard
  • Aromatic Bay Leaves1 piece bay leaf (bay leaves)

Instructions
 

  • Sauté garlic and onion in a large pan until caramelised.
  • Then add the venison mince, green pepper, chopped mushrooms, and sauté.
  • Add pepper, salt, oregano and bay leaf and stir.
  • Add the wine, and stir for 2 minutes until it comes to a boil.
  • Use a lid to cover the pan and simmer for 30 minutes on low heat.
  • In a bowl, blend the heavy cream, mustard and flour.
  • Uncover the pan, take some of the stock, pour it into the cream, and stir quickly.
  • Pour the mixture into the pan and shake it to blend in evenly.
  • Serve with rice or spaghetti.
