Mince And Potato Curry. Hasn’t the footy season come around quickly. I am one of those people who rush around from the second I finish work, getting home to have afternoon tea, start dinner, jump in the car, go to the supermarket, race home for 20 minutes to keep preparing dinner, finish cooking dinner and cleaning the kitchen while I’m cooking… You get the picture. I’ll take a breath now as well as a teeny sip of my red wine while I write this. Did I mention that I clean the kitchen while I cook, but it still looks like I haven’t when we finish eating?

Anyway, I thought I would share this really great, easy, and fully eaten recipe by every member of the family, Mince And Potato Curry recipe that you can throw together in between running the kids around to their sporting commitments after school. I had on hand about 700 grams of mince (according to my eye calculation) and a few potatoes, and this is what I came up with.

Ingredients
 
 

  • Raw Meat Mince700 grams ground beef (minced beef)
  • Potatoes4 medium potatoes - diced into about centimeter cubes
  • Ripe Yellow Onion On A White Background1 medium yellow onion - diced
  • Garlic2 teaspoons garlic - minced
  • Rice Bran Oil In A Bottle2 tablespoons rice bran oil
  • Curry Powder In Wooden Bowl Over White2 tablespoons curry powder
  • Tomatoes1 can tomato - diced
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper
  • Himalayan Salt1 teaspoon Himalayan salt (pink salt)
  • Heap Of Ground Cinnamon And Cassia Cinnamon Sticks¼ teaspoon ground cinnamon
  • Heap Of Ground Ginger¼ teaspoon ground ginger
  • Turmeric Powder In Plate½ teaspoon turmeric
  • Peas1 cup peas
  • Fresh Sweet Corn1 cup corn

Instructions
 

  • Add oil to the pan and heat.
  • Fry onion and garlic until it starts to soften.
  • Add diced potato to the pan and sprinkle on half the salt. Fry for about 5 minutes (I made this up as I went along. I was going to fry it until it was brown but decided to quicken the whole process).
  • Remove the onion/potato mix from the pan and set it aside.
  • Add mince to the pan and fry until brown, making sure you use a spatula to break up the mince.
  • Once brown, add the salt, pepper, spices and veggies and give it a good stir.
  • Add everything back into the pan and reduce the heat to a simmer for about 25 minutes (making sure your potatoes are cooked through).
  • Dish it up and enjoy (I enjoyed it with shredded cheese too).
